Brownie Truffles

How many of you are like me and enjoy those Oreo Truffles that we make for holidays and special occasions? They're so good and look really appetizing on your cookie tray or in a pretty dish.

Well, look out Oreos because I heard about another truffle and I believe I've it's one that I like just as much...maybe a little more! Brownies are a definite favorite with almost everyone I know and these don't disappoint.

Ingredients:
1 (9x13")pan of baked brownies (box mix or from scratch-your choice)
3 cups semi-sweet morsels (or a pkg. of Ghirardelli melting chocolate)
1 Tbsp. shortening if using chocolate morsels
Sprinkles or chopped nuts (totally optional)

Instructions:
Bake brownies according to the recipe (DO NOT OVERBAKE) We want them soft and chewy. Cool completely.

Cover a baking sheet with parchment paper and set aside.

Once cooled, use a fork to crumble the brownies. Roll into about 35 balls and freeze for about 15 minutes. This will make it easier to cover with the melted chocolate.

Melt chocolate in a double boiler or microwave, stirring frequently. If you are using the morsels, add the shortening to help give it a smooth, shiny coating.

Drop a brownie ball into the melted chocolate and roll with a fork, then let the access chocolate drip back into the pan before placing it onto the parchment paper. If you want to sprinkle them with nuts or candies, now is the time, before they harden.

Leave at room temperature until chocolate coating hardens. This only takes a few minutes.

These can be stored in the refrigerator for up to a week or in a plastic bag in the freezer for a month.

A Tip from Grammy:
-Make your own dipping fork by breaking off the two middle tines of a plastic fork and using just the two end ones.
-Use white chocolate morsels, add peppermint, cherry or raspberry extract to the chocolate coating.

Best Basic Brownies

A Chocolate Lover's Dream!



Have you been under the impression that a boxed brownie mix might just be the easiest and best way to go?  Guess what, this recipe will prove you wrong.  It was quick, easy and the texture is the same fudgy, chewy one as the mix.

Now who doesn't love brownies?  I know they've been a favorite in my family forever, and this is the best and easiest basic brownie recipe I know.  

The beauty of this recipe is that you can add walnuts, peanut butter, chocolate chips, white chocolate chips, frost them, leave them plain...it doesn't matter, you can do it all!  


Ingredients:                      
                           
1 cup butter
2 cups granulated sugar
4 eggs
2 tsp. vanilla extract
2/3 cup unsweetened cocoa powder
1 cup flour
1/2 tsp. salt
1/2 tsp. baking powder

Preheat oven to 350'F.  Grease a 9x13 pan.

Melt butter.  Remove from heat and add ingredients in the order listed, stirring well by hand, until all ingredients are blended.  Do not over-stir or brownies will get tough.

Bake for 25-30 minutes (mine took exactly 24 minutes).  Do not overbake.

If you want those wonderful clean edges, use a plastic knife to cut them (best brownie trick ever).


Creamy Brownie Frosting: (optional)

6 Tbsp. butter, softened
6 Tbsp. cocoa
2 Tbsp. light corn syrup
1 tsp. vanilla
2 cups confectioners' sugar
4-5 Tbsp. milk (add a little at a time until of spreading consistency)

In a mixer bowl, beat butter, cocoa, corn syrup and vanilla until blended.

Add powdered sugar and milk; beating until spreading consistency.

Nutella Brownies

Just 4 ingredients!


This takes just about 5 minutes to prepare and will give you 16 of the most yummy, chewy, chocolaty, fudgy brownies ever.  

We love Nutella, so that's what I used in these gorgeous brownies.  I'm sure you can use any flavor chocolate spread that your family enjoys. 

Ingredients:
1 1/4 cup (13 ounce container) Nutella Chocolate Hazelnut Spread
2 large eggs
1/2 cup all-purpose flour (heaping) 
1/2 tsp. salt

Preheat oven to 350'F.   Prepare 8"x8" baking pan with cooking spray.  Set aside.

Mix chocolate spread and eggs in a medium bowl until combined.  Add flour and salt; mix until all is combined.
Pour batter into prepared pan and spread evenly.

Bake 20 minutes or until a toothpick inserted comes out clean.

Enjoy!

A Tip from Grammy:
-Use a disposable plastic knife!  It will cut through the brownies like butter and will not tear up the edges, even when they're hot!

Candy Bar Brownies

Two in one treat...unbelievably easy and delicious!


I couldn't believe it when my friend told me how good these are!  After all, it's only two main ingredients...a boxed brownie mix and candy bars! 

The candy bars are placed between two layers of brownie batter.  It melts a little into the brownie, but still stays intact enough to recognize the candy.

They taste of rich, chocolate brownie and then the toffee almond candy comes through and takes it to a whole different level of deliciousness!  "Magical" is the word my granddaughter uses to describe these, too...that's one of her favorite words for Grammy's cooking.  Gotta love that kid!

Oh, you don't have to use a box mix either, it works great with your favorite homemade brownie recipe.  But, if you need a quick dessert, just use the box mix, I won't tell anyone.

There's a Grammy Tip at the bottom of the recipe that I didn't know about before I cut these. Try it, it really works! 

Ingredients:
1 Family-size box brownie mix (for 9x13" pan) OR your favorite homemade recipe (plus whatever ingredients are on the box directions)
2 (6.8oz.) Giant-size Hershey's Symphony candy bar, or any large similar bar. (Symphony is our favorite.  But, I'm willing to try Butterfingers, Kit Kats, Reese's Peanut Butter Cups and others.)

Preheat oven to 350'F. or 325'F. if using a glass baking dish.

Prepare brownie mix according to the box directions.  Stir just until all mixed.  Don't over-stir brownies, they'll get really tough.

Prepare 7x11" pan.  Line pan with aluminum foil and spray with non-stick cooking spray.

Pour 1/2 brownie mixture into the pan and spread out with a spatula.

Unwrap candy bars and break into individual sections.  Place on top of the batter, so they cover the surface.  (I always have a few pieces leftover.  But, don't worry, they never go to waste.  :))

Pour remaining batter over the candy bar sections and spread to the edges to cover candy.

Bake according to the brownie mix time and temperature. This takes about 35-40 minutes.

Let cool, then lift from the pan using the edges of the foil, before cutting.

A Tip from Grammy:
-If you want brownies that aren't torn apart when cutting, just use a plastic knife. They'll look professional!
