Lemon Scones

Amazing!

If you're a lemon lover like me, you'll want to try these wonderful Lemon Scones.  Not only are they totally delicious, but they melt in your mouth!    The scones' density is perfect -- not too dense, not too airy -- and they were perfectly moist! 

You can use a food processor or by hand (which is what I did).  Just make sure your butter is cold and work as quickly as you can.  Be careful not to over-mix.  All those little pea-size clumps of butter create structure in the scones and give them a tender, fluffy consistency when baked.  The tartness of the glaze is perfect with the light and slightly sweet taste of the scone.  This recipe is a keeper!

Once you make scones, I promise you'll want to include them in your menu regularly, they're so easy to make!  I included a few tips that I like to use.  


Ingredients:                                                

2 cups all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold butter, cut into small cubes 
*2/3 cup buttermilk, add slowly until just wet enough to stick                          
1-1/2 teaspoons grated lemon peel

Icing Ingredients:
3/4 cup confectioners' sugar
1 1/2 Tbsp. freshly squeezed lemon juice
*Yellow food coloring (opt.)


Directions

Preheat oven to 350F.  Grease a baking sheet pan.

In a medium bowl, combine flour, sugar, baking powder, baking soda and salt.  Using a fork, cut in the butter until mixture resembles coarse crumbs.   Add buttermilk and lemon peel, stirring just until mixed.  Over-mixing will cause a tough scone, so be careful here.
                                                             
Turn onto a floured surface; knead gently six times.  Shape into a ball and place on prepared baking sheet.

On greased baking sheet, *using your hands, pat dough into a circle about 1/2 in thick and 8-1/2 in. in diameter.  Cut the dough in half then cut the pieces into half again, giving you 4 squares. Cut the squares in half on a diagonal to give you a triangle shape.  Makes 8.

Place 2" apart onto baking sheet

Bake at 350° for 10-12 minutes or until tops are lightly golden and firm to the touch.

Prepare the icing by mixing the powdered sugar with enough lemon juice to make a drizzling consistency.  *Add a drop of yellow food color if desired.

Tips from Grammy:
1.) Scones are best when served fresh out of the oven or on the same day.  For next day eating, reheat them in the microwave for just 8-10 seconds. 

2.) If you don't have buttermilk, just place 1 Tbsp. of vinegar into a measuring cup and add milk (or cream) to 1 cup...stir and use in place of buttermilk.

3.) Don't use a rolling pin, you want scones to be light and fluffy.

Lemon Almond Tea Bread

A timeless recipe!


I'll never forget the first time I had this bread.  Now, I'm going back about 40 plus years, so that tells you how good it was...absolutely memorable!

Almond extract and lemon zest flavor this loaf of tea bread and then it's intensified with a tart lemon glaze.  Just brush the  lemon glaze over the hot loaves and there you have it. 

I couldn't believe what a great combination of tastes this would be in my mouth!   We were extremely happy, my mouth and I!

This recipe makes two beautiful loaves, so you can give one as a gift. I promise you, you'll make a friend or neighbor very happy! 



Ingredients:
2/3 cup melted butter
1 cup sugar
4 eggs
1/2 tsp. almond extract
3 cups sifted flour
2 tsp. baking powder
1 tsp. salt
1 cup milk
2 Tbsp. grated lemon peel (I used 1 Tbsp. dried lemon zest)
1 cup chopped nuts (optional)
6 Tsp. fresh lemon juice
1/2 cup confectioners' sugar

Preheat oven to 325'F.  Prepare 2 loaf pans.  (I sprayed mine with Pam)

Combine the butter and 1 cup sugar; blend well.  Beat in eggs, one at a time.  Add almond extract.

Sift together dry ingredients; add to egg mixture alternately with milk.  Blend just enough to mix.  Fold in lemon peel and nuts.

Turn into greased loaf pans (aluminum or glass).  Bake in slow oven 325'F. for 30-35 minutes or until toothpick inserted in the middle comes out clean.  (If it isn't done in 35 minutes, just add 2 minutes at a time.  My loaves took 37 minutes total.)

Mix 6 Tbsp. of lemon juice and 1/2 -3/4 cup confectioners sugar.  Immediately spoon over hot loaf in pan.

Cool 10 minutes, then remove from pan.

Cool on rack.  Do not cut until completely cooled.

Makes 2 loaves.

Pumpkin Spice Bread

A taste of Autumn!

Pumpkin flavored anything!  It just seems to take over my brain at this time of year.   I can't imagine having a fall season without baking something with pumpkin in it...usually, it's more than just one delicious pumpkin recipe that will get made!

This is your basic Pumpkin Bread recipe, so if you like to experiment with it,  you can add some really yummy goodies to the batter.  Such as chocolate chips, crushed pineapple, coconut, cream cheese.  There's an endless supply of extras for this delicious bread.  We like it plain, then spread pieces with my Cream Cheese Spread with Pineapple.

I love to spread the cream cheese, pineapple filling to make little sandwiches out of this bread as well as the Cranberry Orange Nut Bread.






Ingredients:
2/3 cup shortening
2 2/3 cups sugar
4 eggs
1 (15 oz.) can pumpkin
2/3 cup water
3 1/3 cups flour
2 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
2 tsp. ground cinnamon
3/4 tsp. ground cloves
1/2 tsp. nutmeg
2/3 cup. coarsely chopped nuts (opt.)
2/3 cup raisins (opt.)

Heat oven to 350'F.  Grease and flour two 9x5x3" loaf pans.

In a large bowl, cream shortening and sugar until fluffy. 

Stir in eggs, pumpkin and water; beat until well mixed. 

Measure flour, baking soda, salt, baking powder, cinnamon, nutmeg and cloves into a separate bowl and stir until combined.  Slowly add the dry ingredients to the pumpkin mixture, beating until smooth.   Stir in nuts and raisins, if desired.

Pour into  prepared pans, evenly dividing the batter between the two pans.

Bake at 350'F. for about 60-70 minutes or until wooden pick inserted in center comes out clean.

Cool for 10-15 minutes, then remove from pans by inverting onto a rack and tapping the bottoms. 

Slice and serve plain, with butter, or cream cheese (Add crushed pineapple to the cream cheese for a real treat.)


Cream Cheese Spread:
4 oz. cream cheese
1/4 cup confectioners' sugar
1/4 tsp. vanilla
1/4 cup crushed pineapple, drained (opt.)

Blend all together in a small bowl, using a spatula.  Slice bread into half slices and spread with cream cheese mixture; top with the other half and make little sandwiches.   So good!
If you don't like pineapple, just leave it out, it will still be delicious!

Ham & Cheese Rolls

A great snack! Quick, easy and so yummy!

My son could never eat anything with sugar, or even the taste of sugar...no fruit, juice, tomato sauce (that's a killer for an Italian Mama) but, he just couldn't bear the taste  When he was a baby, we couldn't wait until he could talk and tell us why he didn't like it.  He would taste sweets, like his birthday cake, and just start gagging.  Now, if that isn't a blow to this girl's ego, I don't know what is!

When Halloween came around each year, even our neighbors stocked him up with SlimJims, chips Doritos and such!  They all knew he couldn't eat candy, yet wanted to include him in the fun.

Finally, the day came when we asked him what it tasted like.  You'll love his one word answer, "Yucky!"   Yep, that's all we ever got out of him.  He just could never explain why, and to this day, he doesn't eat anything with even a hint of sweet in it.

So, this is how I started coming up with snacks for him, besides chips, pretzels, popcorn and the usual.  

I always felt badly that I could please my girls with dessert, but nothing homemade for my son. 

So, I came up with this little snack and it's one of the few that I started making just for him. Unfortunately for him,  it turned out that everyone else loved it so much, I've had to double it every time! Haha!

Hope your family enjoys this, whether they like sugar or not!  

Ingredients:
1  (80z.) can refrigerated Pillsbury Crescent Rolls
8 thin slices of cooked ham (I like the imported)*
8 thin slices of sharp cheddar cheese (I like to use shredded)*
Mustard (any type that you like)

Heat oven to 375'F.

Divide dough into 4 squares, pressing seams together to prevent leakage.

Spread with mustard (as if you were spreading on bread for a sandwich).  Now layer half the ham and cheese.

Roll like a jelly Rolland press dough to cl0se seam and openings at both ends.

Repeat with second half of dough and fillings.

Place on baking sheet and bake for 12-15 minutes or until golden brown.

Cool for 3-5 minutes before slicing into pinwheels about 1" thickness.

*The beauty of this recipe is that you can substitute the ham for other cold cuts, and the cheese for your favorite.  Have fun with the fillings and enjoy.

Pizza Dough

Easy, peasy pizza dough!


My parents and my grandmother always made their own bread and pizza dough.  Of course, they never measured the ingredients, and yet, it would come out perfect every time. 
 
I can still see my dad leaning over a huge bowl of flour, oil, salt, and slowly adding a pan of warm water with the block of yeast dissolved into it.   It was the best!  Hot out of the oven, drizzled with olive oil, salt & pepper...nothing like it!  
 
Just the smell of fresh dough, rising fills the house, even before it's baked! 
 
This pizza dough recipe is easy and great for pizza or sausage roll bread.  If you wanted to make individual garlic rolls, that would be another super easy choice.  Don't be afraid to use your imagination with this dough...breadsticks, calzones!   Have fun and enjoy the process too!

Dough:
3 cups Flour
1 Tbsp. Yeast
1 Tbsp. Sugar
2 tsp.  Salt
1 Tbsp. Olive Oil
1 c. & 1 Tbsp. Warm Water
 
Directions by Hand:
 
-Place flour into a large mixing bowl and make a well in the center.
-Add yeast, sugar, salt, olive oil and water and stir until combined.
-Turn out onto a lightly floured surface and knead for 5–10 minutes or until a smooth ball forms.
 
Directions by KitchenAid:
 
-Place flour into a stand mixers bowl and make a well in the center.
-Use dough hook.
-Add yeast, sugar, salt, olive oil and water and turn on low combined (about 3 minutes).
-Turn to medium and knead for 5–10 minutes or until a smooth ball forms.
  
-Now Place dough ball into a lightly oiled bowl, cover with plastic wrap or clean cloth. Set in a warm place for 30 minutes or until dough has doubled.
-Turn dough out on a floured surface and punch the dough to remove excess air, knead lightly.
-Divide dough in half.  Makes 2 thin crust 12-14" pizzas, or 2 sausage roll breads.
